Check out this video documentary produced by Twelve Films showcasing Lawrence and Lee Ann Kocurek of the Kocurek Family Charcuterie in Austin, TX. They go through some history and convey major enthusiasm and passion for the art of preparing meat produts such as bacon, ham, sausage, terrines, galantines, pâtés, and confit primarily from pork (but also made from duck, goose, lamb, beef, fish, etc.) Originally intended as a way to preserve meats before the advent of refrigeration, they are prepared today for their flavors derived from the preservation process.
